Meet Pedro Solorio: The Local Food Entrepreneur

Leading the charge is 32-year-old Pedro Solorio, a man whose family has become synonymous with the area’s flourishing Mexican dining scene. Pedro and his family have successfully opened not just one or two but four Mexican restaurants around Beaufort and Port Royal, with a fifth one on the horizon!

When we caught up with him on a lovely November day, Pedro sat outside his establishment, Dos Amigos Mexican Grill and Tequila Bar, soaking in the popular spot’s atmosphere. “I love being part of this beautiful town,” he said with a big smile, clearly proud of his accomplishments. Pedro moved to Beaufort from Guanajuato, Mexico, when he was only eight years old and worked his way up from washing dishes to owning his own restaurants.

What’s Cooking at Pedro’s Tacos?

Pedro’s latest venture, Pedro’s Tacos, recently opened at 1742 Ribaut and is serving up some absolutely unique dishes! Think beyond your typical taco joint—here, you can find delectable offerings like birria—a savory Mexican brisket that’s taking the culinary scene by storm. With inventive twists like a 14-inch pizza birria and even ramenbirria, it’s an exciting time for taco enthusiasts!

“I wanted to do something different with my current restaurants,” Pedro explained, highlighting the laid-back, California-style atmosphere where guests can enjoy everything from sit-down meals to quick drive-through pick-ups.

Rancho Grande: A Family Tradition

The Solorio family’s legacy doesn’t stop there. Their first location on Ribaut, Rancho Grande, was once a popular spot on Lady’s Island for fifteen years. Now, since relocating, they’ve seen sales soar by a staggering 30% to 40%!

“A lot of people didn’t want to see Rancho Grande die,” Pedro said, expressing gratitude for the community’s warm reception to their new location.

Culinary Competition on Ribaut Road

Ribaut Road is shaping up to be the ultimate destination for Mexican food lovers, with established joints like Agave Mexican Grill and La Nopalera right down the street, all vying for hungry customers’ attention. Initially, Pedro worried about competing so closely. “But at the end of the day, I just needed to ‘do me, be me,’” he said, highlighting how he found his own unique niche in the local food scene.

It’s this spirit of collaboration and innovation that has fueled the explosive growth of Mexican restaurants in the area. “Everyone wants birria now,” he exclaimed with enthusiasm, reaffirming his place in the culinary future of the East Coast.

Understanding the Rise in Popularity

So, what’s making local Mexican cuisine such a hit in Port Royal? According to Pedro, it has to do with the overall dining experience his restaurants provide. His goal is to give customers the feel of a five-star dining experience without breaking the bank. It’s affordable yet fulfilling—a perfect combination!

On a personal note, Pedro believes that promoting a positive attitude among staff can significantly enhance the experience for diners. “There’s a lot of hate in the world today, but I want our restaurants to be a place of smiles and warmth,” he explained.

The Future is Bright!

Looking ahead, Pedro has big plans for his family’s restaurant empire. He wants to return to Lady’s Island for their fifth restaurant in 2025 and keep expanding the Mexican culinary legacy his family has built. “Beaufort has given me everything, so it deserves the best of me,” he shared sincerely.
